Method
Mixing bowl
- 450 g strong flour, sifted
- pinch salt
- 75 g caster sugar
- 75 g cubed butter
- 20 g fresh yeast
- 1 whole egg beaten
- 250 g milk, warmed
Filling Ingredients
- 100 g cubed butter
- 200 g soft brown sugar
- zest of 1 orange and 1 lemon
- 100 g raisons, covered in boiling water
Method
- 180G 160F
- Rub butter through the mixing bowl dry ingredients.
- Pour a bit of warm milk into the yeast and mix.
- Using a dough hook, add yeast and egg slowly.
- Slowly add milk.
- Increase speed until it gives way from the bowl.
- Cling and prove.
- For filling, cream butter and sugar.
- Spread dough into a rectangular shape with hands. Pull dough from underneath.
- Spread filling on dough, leaving 1 edge empty but filling to other 3 sides of dough.
- Scatter raisons and zest.
- Roll on long side (hot dog style).
- Cut and place in a sprayed tin with the seams facing inward and with some space between each roll.
- Prove.
- Bake 20-25 minutes.
