- zest 2 lemons
- 88 g caster sugar
- 105 g double cream
- 75 g lemon juice (2 lemons)
- 3 eggs, lightly beaten

- Warm pan ingredients until the sugar is dissolved.
- Whisk lemon juice and eggs together.
- Cool the cream.
- Combine the two mixtures and sieve it.
- Pour into baked tart cases.
- Bake 20-30 minutes.
- Cool at room temperature.
